Crescent Rolls

yields 4 dozen

4 tablespoons yeast
2 tablespoons sugar
2 cups warm water
1 cup melted butter
1 cup sugar
6 beaten eggs
1 1/2 teaspoons salt
9 cups of flour

1. Melt the butter, set it aside to cool so that it does not kill the yeast.
2. Combine yeast and sugar together, then add warm water. (use your mixing bowl)
3. In another bowl beat eggs and then add sugar.
4. Touch the butter to make sure it is cool to the touch, then add it to the egg mixture. Add egg mixture in with yeast.
5. Add salt and 4 cups of flour. Mix. (will be very wet)
6. Add 4 1/2 cups flour. (will still be sticky) Save last 1/2 cup flour for kneading.
7. Knead dough with last 1/2 cup of flour and then put ball in a bowl. Cover and let rise until double in size. (You can speed up the process by turning your oven to 200 degrees and then turn it off when heated. Place dough in heated oven. Will take 1 - 2 hours to double.)
8. Put ball of dough on floured board and cut into 4 parts.
9. Roll each ball into a circle and spread with melted butter. Cut into 12 pieces (pizza style, pizza cutter works great).
10. Roll each piece up and place on a cookie sheet coated with butter. (4 across, 4 down, will take about 3 cookie sheets)
11. Raise under cover for 4 hours.
12. bake at 400 degrees for 8 - 10 minutes.
